Depending on what kind of pot you use to fry, add the appropriate amount of oil that would cover the chicken. Use a thermometer to check the oil temperature. You want it at approximately 220°F.
Cube chicken into 1″ or smaller cubes.
Mix dry ingredients into bowl for coating. I left off measurements because frying batter is mostly eyeballing.
Dry chicken as best you can, dredge chicken in dry ingredients.
Put chicken into fryer for approximately 3-5 minutes depending on how big your cubes are.
Place finished chicken on parchment paper so it doesn’t get soggy. Enjoy!
