Popcorn Chicken

J was craving popcorn chicken, and after going through our monthly budget review, decided to make a try for homemade instead. It turned out super delicious.

…Also because my boba milk tea addiction is getting out of hand.

Instructions
  1. Depending on what kind of pot you use to fry, add the appropriate amount of oil that would cover the chicken. Use a thermometer to check the oil temperature. You want it at approximately 220°F.
  2. Cube chicken into 1" or smaller cubes.
  3. Mix dry ingredients into bowl for coating. I left off measurements because frying batter is mostly eyeballing.
  4. Dry chicken as best you can, dredge chicken in dry ingredients.
  5. Put chicken into fryer for approximately 3-5 minutes depending on how big your cubes are.
  6. Place finished chicken on parchment paper so it doesn't get soggy. Enjoy!
