J was craving popcorn chicken, and after going through our monthly budget review, decided to make a try for homemade instead. It turned out super delicious.
…Also because my boba milk tea addiction is getting out of hand.
Depending on what kind of pot you use to fry, add the appropriate amount of oil that would cover the chicken. Use a thermometer to check the oil temperature. You want it at approximately 220°F.
Cube chicken into 1" or smaller cubes.
Mix dry ingredients into bowl for coating. I left off measurements because frying batter is mostly eyeballing.
Dry chicken as best you can, dredge chicken in dry ingredients.
Put chicken into fryer for approximately 3-5 minutes depending on how big your cubes are.
Place finished chicken on parchment paper so it doesn't get soggy. Enjoy!
I love making banana bread because I can never finish a whole hand of bananas! This bread isn’t too dense, can easily be doubled if you want a full size loaf. This recipe covers a half loaf at 6 servings. Use extra bananas for extra banana flavor. 🍌
Banana² Chocolate Chip Bread
No nuts with this one!
Preheat oven for 350°F. Grease or line loaf pan with parchment paper.
Combine flour, baking soda, salt. Set aside.
Beat in eggs and bananas.
Incorporate dry with wet, about 1/3 at a time.
When completely incorporated, fold in chocolate chips.
Pour into loaf pan and place in oven for about 60 minutes, or until toothpick comes out clean.
If you're using a mixer you'll want to start off with the wet ingredients first, but if you're doing it by hand I recommend mixing the dry first then the wet, then slowly incorporate. Fold in chocolate chips last.
You will need more time for glass dishes vs aluminum bakeware, and convection vs non-convection. A glass convection oven got me around 1 hour and 10 minutes.
